At this time of year as new crop corn comes in, we may experience slight variations in color and texture of our corn tortillas. Corn is of course harvested once annually and stored in silos for use during the year. Every month the corn gets a bit older and may exhibit minuscule changes in color and moisture content. However, the change is gradual and nearly imperceptible from month to month.
New crop corn may be significantly different at the onset because we go from corn that has sat in a silo for nearly a year to corn that has been recently harvested. These changes at harvest are inevitable, however we will do all we can to minimize any changes to the finished product.
